What to Make When You Don’t Know What to Make

frittataWhat could be easier, healthier and tastier than Frittata?

Unlike most blogs that meander and go on and on about how they were inspired by a recipe or what “such and such dish” reminds them of… I’m getting hungry and I want to make the darn thing, so here’s the recipe straight up so that you too can make it and enjoy! 🙂


 

Clean and Easy Frittata – Serves 4-5

12 eggs

1-2 Cups Chopped veggies of choice (onions, garlic, frozen pepper strips, tomato, asparagus, broccoli, even cooked potato, etc…)

2 cups fresh or frozen greens like kale, chard, collards or spinach

Chopped Meat of choice (or not – to keep it vegetarian – I’m using 4 large chopped chicken sausage links)

Seasonings of choice – fresh or dried herbs, red pepper flakes, salt, pepper, turmeric, chili powder

Oil an oven safe skillet (I have an Avocado oil spray which is nice, but you can use olive oil, butter, bacon grease, coconut oil).  Crack in the eggs and scramble, toss in everything else and distribute evenly. Bake for 45 minutes at 375F or until set.  Let cool, cut and serve with hot sauce, sriracha, raw sauerkraut or good ol’ ketchup. You could also make this in muffin tins for on the go breakfasts or snacks.
